Cheese Muffins

The term “Muffin” rings a bell for a sweet, cakey breakfast delectable. In this case please cancel out the word “sweet” in your mind, because there is nothing sweet about my muffins Lol. These are warm, savoury and CHEESY.

This week we’re breaking all the food stereotypes “savoury biscuits, cheese muffins”. Not everything that is baked needs to be sweet, and some people like us prefer savoury snacks over sweet treats.

There are plenty of ways to enjoy these muffins. You can eat them as is or slice in half and add a savoury filling of your choice to make a sandwich like the image below.

Cheese Muffin Recipe

INGREDIENTS:

  • 60g Butter
  • 4 Eggs
  • 500ml Flour
  • 5ml Salt
  • 5ml Mustard
  • 20ml Baking Powder
  • 400g Grated Gouda Cheese
  • 250ml Milk
  • Preheat oven to 200 degrees C.
  • Beat Butter and the Eggs together
  • Mix all the dry ingredients and add to the butter mixture. Mix well.
  • Add milk gradually to form a fairly sticky dough.
  • Fill greased muffin pan to 2/3 full.
  • Bake for 10-15 minutes.
  • Makes 24 muffins.

Serving Alternative:

  • Rolls for a braai
  • Rolls for stews

Easy Bread Quiche

That moment when your vegetables are close to spoiling because you’ve over filled your fridge *gasp*. I get this moment about 2-3 times a week because I always buy more food than I should, same with catering; I ALWAYS over cater. I catered for a braai recently which had 10 guests in total but ofcourse home girl made enough food for 30+ people.

Point is I do not like food going to waste so as soon as things are about to spoil I wreck my head trying to come up with recipes I could share. This recipe happened to be a Quiche with a bread casing.

Egg Nton Nton

Woke up feeling so hungry after just eating cereal on the previous day. I was craving a really hearty and delicious breakfast and I didn’t even know what I was going to have seeing as I botched meat.

Opened up the fridge and saw just tomatoes and eggs. I googled “Eggs and tomatoes” LOL then scrolled through a few pictures. I don’t follow recipes, I usually look at the picture, read through it and remix it in my own way or sometimes I just look at the picture and try to figure out what was put in it. So after seeing pictures of those dishes with sauce and eggs, and in my head I thought “Gravy, but lets modernize it and add eggs and some vegetables.” So that is how this recipe came about. My best breakfast ever.

There is nothing in this world I hate more than food wastage. I cannot stand seeing old fruits and vegetables being thrown in the bin, because there is always some use for those.

To be honest, yes i hate it but I am guilty for doing it. This is because I do not yet have my mansion with a huge garden space to be able to throw all my fruit and vegetable peels (This might not really be the correct way to do it according to gardeners/farmers, but as long as it causes no harm i’ll keep this way until I learn the proper way).
