All hail from the land of a chicken lover!
Guys I love chicken to bits and pieces, KFC, Chicken Licken, Hardbody Chicken (a complete favorite).
The only thing I do not like is the idea of “deep fried” chicken. Imagining my chicken soaking in hot oil and absorbing all that fat just puts me off. I don’t have an issue with shallow frying, its just the swimming in fat that I do not approve of.
Since I’m a bit of a DIY in the kitchen I decided to try my own version of fried chicken, which I think could be right up there with your KFC’s and Chicken Licken lol.
Recipe:
You will need all your favorite spices. Boil you chicken in stock and some spices for about 20-25mins, so it can absorb all the flavors. Make sure you do not over cook it, because you are still going to grill it. Once your chicken is slightly cooked, allow it to cool and prepare your coating.
Beat some eggs into one bowl and put some crushed kellogs cornflakes and spices in another bowl. Coat your chicken with the egg mix then coat it with cornflakes.
Once all your chicken has been coated, refrigerate it for about 15mins to allow your coating to set.
Grill your chicken in a preheated oven at 180-200 degrees for about 30 minutes then VOILA! you have your “non” Fried chicken.
Alternative: If you’re just craving a snack you can dip you chicken into a sauce mix (sweet chillie, chillie and BBQ) .
