Creamy Chicken Liver Pasta
Pasta is definitely a dish for the lazy or for the tired. It is the simplest and quickest meal you could prepare in just under an hour. Unfortunately just because it takes less than an hour does not mean you can leave it cooking while you watch TV or run your errands. It is quick, but requires your undivided attention.
So listen up housewives and career women. Pasta can be incorporated into your dinners at least once a week on that day when you don’t feel like slaving away on the stove for too long.

Ingredients:
- Cooked Pasta (I am giving you the benefit of the doubt here)
- Chopped Onion
- Chopped Parsley alternative Robertsons Dry Parsley
- Chopped Thyme alternative Robertsons Dry Thyme
- Chopped Garlic
- Chopped Chili alternative Robertsons Chili Flakes
- Olive Oil
- Cleaned Chicken Livers
- 250-500ml Fresh POURING/Whipping Cream (oh dear Lord not whipped please)
- Your Preferred Spices (Make it your own experiment)
Method:
- Heat your Olive Oil on medium heat.
- Add onions, garlic and your herbs – I prefer to cook these on medium heat to avoid burning and to extract the flavors.
- Increase the heat to high heat and once hot add your livers – Be sure to use a spacious pan/pot to avoid your livers filling up the whole pan. These will result in your livers creating steam and they will end up boiling instead of frying, so to maintain dry heat make sure the livers have enough air and space in between.
- Once your chicken livers are cooked. Remove Chicken Livers. Reduce heat to medium – and add your cream (250ml – 2 people, 500ml – 4+ people).
- Allow your cream to reduce on low heat while constantly stirring (Make sure your stove is not to hot, because your cream will split)
- Once your cream has reduced and you’re happy with the consistency, taste and add seasoning If necessary.
- Add your livers back and include the pasta bit by bit until it is all coated and there’s still remaining cream, you don’t want dry pasta. Cook for a further 5-10 mins to warm up your pasta.
- Dish up and Enjoy.
