Chicken Tandori
I’ve never been great at chicken stews, but I LOVE them. Most of us obviously grew up on chicken and it was always either stewed or fried and I don’t think I will ever get tired of it.
They say stick to what you know, so I always stick to grilled chicken. When it comes to that I swear I am the Master.
I was paging through a recipe book and bumped into a Tandori Chicken Recipe, read through the ingredients and the steps for the marinade. I decided to try the recipe. In my terms this means use whatever I can remember from the recipe and incorporate my own things, so all I remembered was the Chicken, Plain Yoghurt and Chilli. The rest I really don’t remember and I couldn’t be bothered because in my Kitchen I make up my own recipes using peoples names Haha!!
Make sure your Oven is preheated to 180°C before reading further.
It definitely won’t look good during the Preparation phase, so get it cooking Ladies.
Ingredients:
- Chicken pieces – Make thin cuts on the flesh.
Marinade:
- Low Fat Plain Yoghurt
- Garlic
- Santino’s Chilli Sauce & Marinade
- Sriracha Hot Chilli Sauce
- Cayenne Pepper
- PFM Portuguese Chicken Spice
- Robertsons Chicken Spice
- Robertsons Dried Rosemary
- Aromat
- Lemon juice from 1 lemon wedge
- Mix all the Ingredients together and marinade the chicken for a minimum of 30 minutes, you can even leave it overnight.
Method:
- Coat your Oven Dish with with Cook & Spray and pour in the chicken – Make sure it is a big dish and the chicken pieces are not sitting to close to each other to avoid it steaming, creating water and washing out the marinade.
- Roast your chicken on convection for about 40 minutes on 180°C until it is Golden.
- Prick the chicken to see whether the juices are clear or bloody. If the juice is clear your chicken is ready to be chowed.
